Dinner

Wednesdays are my long days, Jen usually works until 7-8p so I’m on my own for the evening routine.  I’m not used to entertaining a toddler while trying to cook dinner and clean up, so I end up taking shortcuts I don’t normally take. Oh, and I need my break time to screw around on the internet, it’s important to my mental health ;). For example, this blog post is brought to you by beer and Dora the Explorer:  

 I should be giving her a bath and not letting her try to climb into the tv, but I’m (being lazy) taking my break. So, before Dora is over and I have to get off my butt and do stuff, let me share our latest Wednesday night fast dinner recipe.  

 I’m not quite sure what to call it, maybe southwestern pasta salad? It’s a recipe from Taste of Home-Simple and Delicious, that I have tweaked a bit. I’m a huge fan of this magazine, I think everyone should subscribe to it! Anyway, here is the recipe:

Southwestern Pasta Salad

3 poblano peppers, halved and seeded

3 ears sweet corn, husks removed

1 sweet onion, sliced into 1/2 inch rings

2 cans black beans

1.5-2 cups spiral pasta

2 tomatoes, chopped

Dressing

1/4 cup lime juice

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon cumin

1/4 teaspoon pepper

2 cloves minced garlic

1/2 cup chopped cilantro

1/2 cup ranch dressing

Rub the corn, onion, and poblanos with olive oil, and grill until crisp/tender with blackened grill marks. Meanwhile, cook the pasta and mix up dressing ingredients. When the veggies are done grilling, cut the corn off the cob and roughly chop the poblanos and onion. Combine everything in a big bowl, and serve!
